Varan is a type of a dal that is prepared without tadka. Since it served on a puja ki thali it doesn't contain oil and any spices except turmeric and asafeotida. This is a plain dal is with onion, garlic and ginger. Varan is traditionally prepared with tur dal but you can take any dal of your choice. It tastes best with hot steaming plain rice. Varan Bhat is a popular dish in Maharashtra. Ingredients: 100 gms Tur Dal (Split Pigeon Peas) 1/2 tsp Turmeric Powder 1/4th tsp Asafeotida Sugar Salt to taste Water Method: - Wash and soak the tur dal in water for 30 minutes. - Add some water in the pressure cooker. Put a stand inside the cooker. - Add some water in the soaked dal. Also add sugar, salt, turmeric powder and asafeotida. Give a stir. Put this dal in the pressure cooker and cook it on 3-4 whistles. - Open the lid and stir the cooked dal well. - Bring to a boil and your varan is ready. - Serve it with steaming rice and a dollop of ghee on top.
